The Bale region lies in southern Ethiopia, where forests surrounding the mountains are home to organic and sustainably grown  Arabica coffee varieties. Coffee in this area grows semi-wild beneath forest canopies. Cool mountain temperatures, consistent rainfall patterns, and nutrient-rich soils provide suitable conditions for the slow maturation of cherries and the development of complex sugars.

Smallholder farmers carefully handpick cherries from rare wild-growing coffee varieties and dispatch them for natural processing. The cherries are dried in Bale’s cool mountain air and steady sunlight, producing a naturally sweet, fruit-forward cup suited for both speciality and commercial roasters.
