Yirgacheffe Origin - Elevation, Processing and Cup Character

Yirgacheffe occupies a tightly defined highland zone in southern Ethiopia, typically above 1,800 meters, where cool temperatures and consistent rainfall slow cherry maturation and build dense beans with high aromatic potential. Unlike broader production regions, Yirgacheffe is shaped by micro-lot farming and centralized wet-processing, with cherries delivered to washing stations within hours of harvest. This system places cleanliness, fermentation control, and flavour separation above yield volume. In the cup, Yirgacheffe presents high-definition acidity, white-floral aromatics, layered citrus brightness, and a light, structured body. The profile is defined by clarity, lift, and finish precision rather than sweetness weight or mouthfeel density, making it a reference origin for evaluating roast control and brew technique.
